Creamy Chicken & Spinach Casserole (with rice and curry)

Hi friends!

So I was tagged for a #widn post on Instagram yesterday afternoon and it just so happened that I was setting the table for Sunday dinner with my husband. I mentioned that I had a chicken, curry casserole in the oven and a couple people were interested in the recipe. So, here it is! I don't have a picture of it because I forgot to take one. I do, however, have a detailed recipe for you below. It is so good y'all! I can't take credit for it though. It is my mother-in-law's recipe that she got from another friend of hers. Those Southern women sure can cook! And...I'm learning myself. Bon Appetit!

Creamy Chicken & Spinach Casserole (with rice and curry)

What you'll need:

Minute Rice (4 servings)
1 can of Cream of Chicken Soup
3/4 cup of light Mayo
1 10 oz. frozen box of chopped Spinach
3 chicken breasts
1/4 cup of chicken stock
2 T curry powder (more if needed)
1 tsp salt
2 cups of shredded Colby cheese


Pre-heat oven to 350 degrees.

Boil chicken in salted water.
Let chicken cool and cut into small cubes.

Cook rice as directed for 4 servings.

Cook Spinach in Microwave as directed. (drain after cooked)

In a large mixing bowl, combine Cream of Chicken Soup, 3/4 cup of light Mayo, Spinach, 1/4 cup of chicken stock, curry powder, splash of salt and chicken. Mix thoroughly.

Place contents into a 9x13 baking dish. Layer shredded Colby cheese on top.

Cook in oven for 25 minutes at 350 degrees.

This is the closest picture I could find on the internet of this recipe. It looks like they don't cube the chicken but I do. It makes it so much easier to serve!

Serve with salad and wheat rolls!
